Perfect Pizza Tips

What makes a great pizza. A main ingredient is the sauce. After trying several bought sauces with little success, I decided to  make my own. Usingin San Marzano canned tomatoes made a huge difference. This sauce takes only 10 minutes.  Make extra. It freezes well.

Homemade Pizza Sauce

1, 28-ounce can San Marzano whole tomatoes

2 tablespoons olive oil

1/4 cup grated onion

4 crushed garlic cloves

3/4 teaspoon dried oregano

2 teaspoons sugar

1/4 cup chopped fresh basil

Salt and freshly ground black pepper

Crush whole tomatoes with their juice in the food processor. Heat olive oil to a large skillet over medium-high heat. Add onion and garlic and saute 2 to 3 minutes. Add oregano and saute another 30 seconds to 1 minute. Add crushed tomatoes and sugar. Stir to combine ingredients. Cook until a thick sauce, about 5 minutes. It may need a few more minutes to cook down.  Remove from heat and stir in fresh basil and salt and pepper to taste.
